Chef Atsushi Yamamoto founded the Michelin-starred Hototogisu Ramen in Tokyo, Japan in 2006. The restaurant has received prestigious awards, including a One Michelin Star from 2019 to 2021 and the Tokyo Michelin Bib Gourmand title from 2015 to 2018. Despite its humble beginnings as an eight-seater in Shibuya, Hototogisu Ramen is now one of only two ramen shops with a One Michelin Star in 2021. Chef Yamamoto emphasizes creating unique flavors while expressing gratitude to ingredient producers and a commitment to reducing food waste. He continues to challenge himself to improve and hopes to share authentic Japanese Ramen worldwide.
