Chef Tan-San started Hajime Tonkatsu & Ramen due to his passion for Japanese cuisine. The name Hajime means "beginning" and reflects the philosophy of the restaurant, which emphasizes a return to the basics of food. The restaurant also aims to provide a warm welcome to all customers. Chef Tan-San is the first Tonkatsu Chef in Singapore and has been working towards opening his own restaurant for 40 years.
